Back on the (leather free?) saddle

Well, I have decided to go back to vegan. Yay! I just feel like I gave up too quickly before, and, that there are plenty of things in this world that can be wonderfully delicious without any animal products.

That being said, I think there is a whole crazy vegan culture out there that must be navigated, and explored, before you actually make the decision to go vegan. There are small decisions to be made such as...
Am I going to eat vegan or "live" vegan?

Obviously, a animal product free lifestyle is a wonderful and very respectable way to live, but, it can also be challenging, frustrating, and intimidating. Cooking vegan is a very fun and exciting thing for me, because, I love cooking, and trying new ingredients anyway, but, I am not sure exactly how far I am prepared to go. I use mostly natural beauty products, but, am I prepared to give up all my stand-by items to live this way? Also, clothing. It's not like I wear fur coats and leather chaps, but, I do have a leather bag (that I adore) and some suede shoes, and wool sweaters. Am I ready to give these up?

How far do I need to venture into the world of ingredients?
On my very first day of being vegan, I decided to scope out my snack options. I work an 11-13 hour day on average, and, it is important for me to have something to munch on every now and then, so that I do not slit someones throat. First stop, granola bars. Should be fairly easy, right? Wrong! Every one had some type of whey, eggs, milk, lard, something. But, then there are the ones that don't contain these ingredients, and just state that they are "made in the same facility" as products that contain them. Am I ok with this, or, am I against that thought that some egg powder or milk residue may have snuck into my granola bar?

THE TRUE VEGAN?

This is the most intimidating of the bunch. You can settle in with your vegan cupcake, and glass of almond milk one day , being perfectly content to look up some information online, and get blindsided with the world of, what I like to call the Shi'ite Vegans. Case in point, while looking for a recipe for homemade vegan cheese the other day, I stumbled across an article about pre-packaged vegan cheeses, and how many of them listed vegetable oil as an ingredient. Well, vegetable oil is normally palm oil (apparently), and palm oil is primarily harvested from cutting down jungle and rain forest trees, leaving thousands of animals homeless and dying everyday,therefore, if you eat things containing palm(vegetable) oil, you are a "bad vegan." There are also articles about how farming, even vegetables, is ruining the world, so the only way to be truly vegan is to harvest your food yourself. You can really work yourself into a self-loathing frenzy over this stuff!
Joe(my boyfriend) was a long time, peta- loving vegan for years, back when he was a teenager, and talks about how this mentality is one of the things that ruined it for him. The whole, "I'm more vegan than you" attitude can really spin out of control, to the point where he came to the conclusion(direct quote)-"The only way to be a truly perfect vegan is to kill yourself. Not only kill yourself, but, make sure you somehow set your self on fire, humanely, and extinguish the match before you die, so that it doesn't harm any plants or animals in the process." Now, this is a little extreme, but, you get the point.
My overall opinion is, all I can do is try my best. I may not want to switch shampoos, and, I may accidentally eat some cheese one day, but, if I wake up every morning, and make a conscious effort to eat natural, organic, humanely derived, and whole foods, as part of a primarily vegan diet, then, I will know, in some small way, I am making a difference, even if it's only to myself. And hey, it beats cruising over to the wal-mart parking lot at 3am, and seeing how long it will take for my wool sweater and suede shoes to burn!

Spice


Dinner tonight was delicious. Made some spicy red pepper, mexi soup, and cold cilantro quinoa. I love quinoa a little more every time I eat it. Really filling dinner, and super low in calories and fat thanks to the black beans and quinoa. Also, crazy cheap, thanks to my love of Big Lots.
I have always loved Big Lots, but before it was mostly for cheap junk. But, recently, they have opened some new Big Lots locations in our area, and, they have a great grocery section! Nothing fresh or cold/frozen, but, they have a great selection or organic canned goods, soups, spices, pasta,cereal and rice. They even carry our high end, all natural dog food that I was paying $35 a bag for at whole foods, for $15!!! If you are looking for some cheap organic, vegetarian, or vegan perishables, I'd highly suggest it!

Refreshing Cilantro Quinoa

1.5 cups quinoa
2 diced tomatoes ( small ones, like plum or roma)
1/2 cup fresh diced cilantro (or 4 tablesppons dried)
1/2 peeled and diced cucumber
3 cloves diced garlic
1/2 diced yellow onion
1 tablespoon olive oil
1/4 cup red wine vinegar

Cook quinoa according to instructions. Cover and chill for 1 hour. Add other ingredients and fluff with fork. Serve chilled.


Spicyyyyy Roasted Red Pepper soup.

1 32oz carton roasted red pepper soup( I used wegmans, but, trader joes, or another kind would work)
1 can diced tomatoes(with juice), with green chilies( muri-glen brand)
1 can black beans
1/2 cup frozen corn
1/4 cup chopped cilantro
1 teaspoon cumin
1 teaspoon chili powder
Few grinds of fresh black pepper, pinch of sea salt
( I also add a few dashes of my favorite hot sauce, but, test it first, cause the chilies give it quite a spice already)

Just mix all ingredients, cook for about 10-15 mins on medium, garnish with crushed tortillas, and regular or vegan cheddar shreds. Grab a glass of water, and enjoy!








Breakfast



















My favorite meal is, by far, breakfast. I love waking up in the morning, and, starting out my day with something yummy, that makes me feel good about the day ahead of me. Weekend breakfasts are my absolute favorite, due to the fact that you can wake up in your jammies, turn on some cartoons, grab some coffee, and have the time to really make a great meal.
I am a huge omelet lover, and, have always worked at, and strived toward perfecting them. Yesterday, I started off 2011 with a new outlook on the omelet, due to my friend Pat ( hi Pat) making me an absolutely delicious, very simplistic "french style,"omelet. Now, being the girl that crams anything in the fridge into her omelet, I was very impressed with this basic style omelet, consisting on only eggs, and fresh herbs. It was amazing! So amazing in fact that I woke up this morning, with the goal of attempting a similar dish myself. Now, I did use some tomato, and, actually, in place of fresh herbs, used some homemade chimichurri sauce ( stolen from Pat's house), and, it was delicious. When paired with a bloody mary, by far, a top ten meal. I am not even going to bother posting a recipe, because, we all know the basics of an omelet. I will however say, be sure to use only tiny amounts of liquid to beat your eggs. Half and half, or yogurt are the best. It will keep the egg light and fluffy. Also, any type of fold is fine, as long as you firm a pocket, and, keep in mind the egg is normally ready to be folded, when you see the edge turning a lighter color, or, your center starts to bubble heavily. So, go ahead, make yourself an omelet, and, keep it simple. You'll be so pleasantly surprised with the outcome, and, how just a few strong herbs and spices, can replace a mound of cheese, onions, mushrooms, or whatever, and make you feel much lighter, and better about what you just ate!

Loose Bloody Mary-

I call this the Loose Bloody Mary, due to the fact that, this is one of those drinks that can be made in 1000 different ways, this is just the way a like to make it. Any spices, hot sauce, or mixes will do. I have made them 100% from scratch, with V8, or with pre-made bloody mary mix, but, this was by far my favorite variety. Cheers.

6oz spicy bloody mary mix (we got one flavored with horseradish)
4oz absolute vodka
1 tablespoon Tapatio hot sauce
2 grinds fresh black pepper
1 pinch of sea salt
Chopped celery stalk

Mix all ingredients over ice, plop in celery, and enjoy!







Such a slacker...

Wow, I started this blog in March of 2009, and didn't post a damned thing on it. Well, lets make 2011 the year of not being so cyber lazy. Anyway, to check in, still in Ohio, still Vegetarian, still very budget minded (cheap) and still loves me some cooking!! I read a few books that really messed with my head, and, tried to go Vegan for a while, but, the overall lifestyle actually made myself, my body, and my wallet, feel worse. Granted, I only eat small amounts of eggs and cheese (always organic and chemical free), but, it just wasn't in the cards for me. Oh well, I am still on a never ending quest to be healthy, eat vegetarian, and make my size 9.5 footprint on this planet, as light as possible. I will start posting again, and, I'd love comments, feedback, and other people's recipes as well. Let's make 2011 the year of being healthy, fitting back into our jeans, and making our taste buds cheer!!

Hello all

Hey kids, I am stoked to be starting this blogspot. I am ALWAYS cooking, and, always on the lookout out for some new ideas and recipes, and also, have a ton of amazing ones to share. My dream is to start my own Vegetarian restaurant in or near my own town, but, until Obama fixes the ecoonomy, and I have an extra $25,000, this will have to do. Keep checkin back for my daily recipes, and, also, feel free to post and share some, as well as any cooking, shopping, or eating ideas or tips.  Lets get a big ol' group of veg-heads together. Hey, maybe one day we can even have conventions like Treckies, or Communists ;)
